Overview

Fukasaku, nestled at 215 Cow Bay Rd in Prince Rupert, BC, is a beacon for sushi enthusiasts and lovers of fresh, locally sourced seafood. This restaurant stands out not only for its prime coastal location with stunning harbor views but also for its unwavering commitment to quality and culinary craftsmanship. Here, every bite reflects the rich bounty of the Pacific Northwest, seamlessly woven into traditional Japanese techniques with a refined modern twist.

The menu brims with highlights like the Northwest Ramen and the West Coast Sashimi Palette, each dish delivering distinct, vibrant flavors drawn from the freshest ingredients. The sushi platters offer a symphony of taste and texture, showcasing the ocean’s best through expertly crafted nigiri and rolls. For those seeking a plant-forward option, Fukasaku impresses with inventive vegetarian rolls such as the Veg. Caterpillar and Forest Mushroom, which blend seasonal produce with umami-rich elements.

Signature dishes such as the Maple Miso Glazed Black Cod Collar and Dungeness Crab are a testament to the culinary team's skill in balancing boldness and subtlety. The seafood platter and Fanny Bay Oyster Half Shell provide a pristine taste of the sea, ensuring every meal is memorable. Complementing the food is an impressive selection of chilled sake directly imported from Japan, including premium varieties like 白鶴純米吟醸, which pair harmoniously with the menu offerings.

Atmospherically, Fukasaku cultivates a quiet yet welcoming space where the focus remains firmly on the food and the breathtaking waterfront views. This environment suits both intimate dinners and casual work outings, while the attentiveness and warmth of the staff enhance the overall dining experience. Locals and travelers alike appreciate the fair pricing that respects the freshness and quality of the ingredients, a rarity given the remote location.

Patrons frequently commend the omakase and chef’s special menus—multi-course meals that showcase a carefully curated selection of the kitchen’s best work. These offerings require advance ordering but are praised for their exceptional presentation and perfectly balanced flavor profiles. The chef’s dedication to sourcing and preparation shines through, creating a meal that feels both luxurious and authentically connected to the region.

In essence, Fukasaku is a destination restaurant for anyone seeking an elevated sushi experience rooted in the Pacific Northwest. It serves those who value freshness, artistic plating, and an atmosphere that encourages savoring every bite against a majestic coastal backdrop. For food lovers on the hunt for genuine, skillfully prepared sushi away from the urban buzz, Fukasaku is a must-visit gem.

Probably some of the best ramen and sushi I’ve ever had (because it’s guaranteed locally sourced and the chef is incredibly talented and dedicated to his restaurant!). I can’t hype the food up enough. The atmosphere is quiet but very welcoming and the view of the harbour is incredible! (Also the price is very fair- considering we live 9+ hours from the ocean and pay more at our seafood places for fish that is not fresh!).

I must say I have try various sushi places in Vancouver but none come close to the fresh flavours of Fukasaku. Every entree has a delicious flavour that will leave wanting more. You must try the chefs special which must be ordered one day ahead so you can flavour a bit of everything. But trust me..It is worth the money, the trip and beautiful ocean view in Prince Rupert, BC

I enjoyed my experience here with my co-workers. The food was great. We tried the omakase and that did not disappoint. Every item included was delicious! Just the perfect serving size too, I did not feel stuffed and there was still room for dessert. The service was great as well, friendly and welcoming. Would definitely come back!

Friend recommended this place and did it never disappoint. Especially doing the chef’s choice. Which will be a 5-7 course meal. All the flavours complimented each other. Plus the presentation of each dish was immaculately prepared.

One of the gems in Prince Rupert. Food so fresh that it melts in your mouth. Service is so kind and tentative. I strongly suggest having the Fukasaku favorites, a selection menu from the Chef that it has a bit of everything. Make a reservation, you won't find a table since it's very limited. It's worth it 100%!
